Copy Cat Sweet Baby Rays BBQ Hickory and Brown Sugar Sauce!

Ingredients

170g tomato paste
1 c water
1 1/2 TB pineapple juice +
1/2 tsp hickory salt
1/2 t onion powder
3/4 t liquid smoke
1/4 c white vinegar +
3/4 TB Lemon Juice
4 TB golden syrup
1/8 t ground cumin
6 TB brown sugar
3 TB cold water and 1 TB corn starch + (keep aside)

Heat all in a saucepan except corn starch and stir. Bring to boil. Simmer for 30 minutes, stir occasionally. Add corn slurry. Stir for 5 minutes to thicken. Turn off heat and cool and place in a 500g glass jar (fits perfectly!) in the fridge.

*Note to self* Test these alterations to make the taste better.
3/4 c water
3 TB pineapple juice
3/4 t liquid smoke
1/2 c balsamic vinegar
1/8 t ground cumin
1/8t chilli powder
3 TB cold water and 2 TB corn starch (keep aside)

Comparison:
Mine: Weaker but nice and sweet, less richness and tastes like tomato paste more or less, but with a hint of Brown sugar. Bit watered down in texture.
SBR: is Far more acidic than mine, more smokey and more spicey (like cayenne or something) and has a nice bite (acidity) to it.
Alterations: Decrease the water (to make it more concentrated), definately add more pineapple juice for acidity (don't blend pineapple, that makes it bitter, that or the dried herbs I added later or double boiling it). Chilli powder and smoke water. And slightly more corn starch.
