Raw Vegan Zucchini Pasta!
This was so so tasty, really I was shocked!
Peel and spirooli a zucchini.
Spirooli a carrot (you may want to cut down the carrot so the spirals are shorter or else it will be tricky to eat, as carrot is far more stiff and springy than zucchini.)
Put in a blender:
1 TB tomato paste
2-3 sundried tomatoes
1 tsp oil (from jar or olive oil, or flax...etc)
1 tsp dried oregano, or fresh herbs like basil, parsely...
1 TB cashews, heaped
Enough water to blend.
You must use a small blender to combine, like the "Amazing Blender" or "Magic Bullet".
Blend to combine. Pour over the "pasta".
You can add this sauce to a mince base if you like.
REALLY quick, clean up is an easy scrub in soapy water. Good for you, raw, great for skin! What more could you ask for?
Ofcourse it's also gluten, dairy, soy, corn, and fructose friendly!

It should look more red, as that was the first, less tasty recipe! The right recipe was too good to stop to take a photo of!
