Lovely Cashew "Pizza" Spread / Sauce

A great addition added to a scrambled egg, topped on toast, or added to jaffles....zucchini pasta, or even garden grown silver beet chips (recipe below)!


SOAK (30m - 3 hrs):
1/3c sunflower seeds (roasted) for richer flavour
1/3c cashews
1 tsp nigella seeds
4 sundried tomatoes (or a half of a roasted red capsicum - which wont need to be soaked)
4 dates

then drain.


Once soaked blend with:
1/2 brown onion (raw)
1 raw carrot (shredded unless your blender is a blend tech or vitamix)
1/4c olive oil
1/4c nutritional yeast
2 TB soy sauce
2 TB smokey and spicey bbq sauce
2 TB Tahini
-----I did not have to add any liquid in my mini blender to do this. I filled up the large cup exactly to the brim, adding a few items at a time so that it would all fit- namely that onion took up most of the space so had to be blended down before adding more ingredients.

The finished paste. This would make an excellent cheesy, full flavoured pizza sauce with the addition of herbs!



Chips:
Method:
Pluck wash and dry your silver beet leaves. De stalk, and tear into bite sized portions.

Coat and massage paste into them (depending on leaves you will have left overs). A thin coating will make for a crunchier chip, thicker will have more flavour.



Place on an oiled baking sheet (pack it tight but not touching- as they will shrink) in the oven at 100C for about 10 minutes, flip, and cook another 10 minutes or until crispy. Keep your eye on them. They are done once you pick them up and they maintain their stiff form. If the flop over they are not done yet!

Sprinkle with your salt of choice (smoked salt) and store in an air tight container (to prevent it going weird and chewy later).

ENJOY the healthy chip!

Notes:
This smells exactly like pizza, meat and all, but is completely vegan!!!!
You can also use it as a dip- but as it contains raw onion it is a bit intense, you may choose to stir it over a pot first to cook the onion. I've had luck with spreading it on a rice cake and microwaving it to cook it a bit, it will thicken further.
