Shan, "chickpea cheese" , Chickpea tofu, SOYLESS tofu!

Ok, so many titles but it really is so many things!!!

1 cup chick pea flour
1 cup water
1 t stock
4 TB nutritional yeast
1/2t curry

Combine with whisk

2 cup stock, boiled
1 TB oil
1 tsp herbs of choice (chives...parsely...mixed!)
1 tsp or so of onion flakes
1/2 tsp garlic powder (optional)
Salt to taste - non negotiable!

Simmer 5 minutes until glossy and thick.

Immediately and quickly pour it and set in the fridge for 5 minutes (or more if you want it to cool enough to grate!)



Now do you want to grate it? OR slice it? Batter it or not and fry it? (fried and salted is a delicious cheesy and french fry taste!) or do you want to serve it with a stir fry, or as a "burger", or cut up into soup croutons? Up to you! Use as you would tofu, more or less!
