Oil Free, Low Sugar, Chickpea Raisin Cookies - Vegan, Gluten free, refined sugar free



you may notice a fairy stole two cookies before taking a shot. It was a fairy. Not me. No.


Sometimes you want a chocolate chip cookie but then you remember the fat content in chocolate chips and in margarine and then your heart sinks. Never fear! I have a low-fat. low sugar cookie recipe right here! This cookie is high in plant based protein, high in fibre, as well as fruit! It does, however, contain some sugar- but not too much. It also contains a bit of natural fat in the form of peanut butter. It isn't too much to be worried about. 

I handed them round the table and my brother in law ate 3. I call that a win, i have his stamp of approval! My nephew even ate 1, and then proceeded to take bites out of three without finishing them, typical 3 year old behaviour!



CHICKPEA RAISIN COOKIES
12 cookies

INGREDIENTS
1 1/2c chickpeas (2 tb less than a 420g can)
1/2c heaping oat bran (i am allergic to wheat, if you are gluten intolerant/celiac use G.F certified instant oats)
1/2c coconut sugar
3 TB peanut butter - you can use any nut/seed butter.
1 TB vanilla or almond essence
1/2t baking soda
1t lemon juice
1/2c sultanas or dried fruit of choice (You may also use cacao nibs or choc chips, your choice!)
2 tb plant milk or water
1 drop stevia- optional (I like it perfect without any further sweetener)
water


METHOD - preheat oven to 175 C fan forced
1- Put all ingredients other than baking soda and dried fruit in a food processor. Blend till smooth.
2- Add in the baking soda and sultanas and stir with a spatula or spoon.
3- Once combined use a tablespoon to spoon a heaped tablespoon onto a silpat mat. I use a teaspoon to scrape the batter off the spoon onto the mat. You should have 12 cookies.
4- Once spooned on mat, wet hands and flatten and shape cookies to desired shape, i like them crispy so i make them thinner.
5- Place in a heated oven for 17-20 minutes, the top should have small fissures in it. It will be a deep golden colour.



TASTE
It is not too sweet. You can taste the hint of peanuts. Chickpea taste isn't noticeable but it adds body to do cookie. A mild molasses and honey taste from the coconut sugar is there. A very demure delicate in flavour cookie. It won't steal the show but it will hit the spot without causing too much collateral damage.

TEXTURE
The edges are crispy, the inside is soft, and goldilocks would approve (not too dense, not too cakey).
