Rainbow sushi - gluten free, vegan, healthy, whole food plant based

Ingredients:
6 Artichoke hearts
3 sheets Nori
12 Sun dried tomatoes in vinegar (97% Fat-free)
1/2c Shredded Purple cabbage
3TB Vegan Mayo 
1 Fry's Rice and Chia Protein Burger Pattie. Pat with paper towel well, and slice thinly.
Lettuce of your choosing
1/2 Avocado
1/2 Cucumber julienned
1-2 Carrots julienned
3/4c Sprouted legumes
1/4c Sesame seeds (toasted)
1c Red, Brown, Wild rice mix. Cook it with 1t glucomannan powder or ground flax seeds.
2 TB Tamari - low sodium
DIY Vegan Lox / Smoked Salmon


Method:
Assemble the rolls by laying out the mixed rice. Note- this is not sticky rice and so it does "fall apart". Then add your lettuce and other filling ingredients and roll! Slice and dip in Tamari and eat!

Taste:
This was SOOO good, and the toasted sesame really makes it- I suggest putting it through-out the rolls, not just on top!
