Rum Ball in a Mug (cake)! ...like truffles! Gluten and Dairy Free too!

This still needs slight tweaking:

1 heaped TB rice flour
1 heaped TB coconut
1 TB hazelnut
1 TB cocoa
1 TB drinking chocolate
1 TB brown sugar
1/2 tsp baking powder
1 tsp rum essence, and vanilla essence or to taste
Enough water to make a thick paste that is easily stirred. Thicker than pancake batter, about that of cake batter, a nice thick pouring consistency.

NUKE in a microwave for 45 seconds. (this may leave areas of "rawness" but that's ok, since there is no egg, the raw bits are decadent! Infact i've been tempted to eat the whole lot RAW!) 1 min for fully cooked. But it depends on your microwave oven!

the last time I had rumballs was nov 2009, I just had a brain wave to make a mug rum ball April 5, 2013. Best day of my life.

original recipe:
2 TB drinking chocolate powder
1 TB brown sugar
1/2tsp baking powder
1/2 TB coconut
1 TB oil
2 TB almond meal
1 TB hazelnut meal
1 TB rice flour
1 tsp rum and vanilla essence
enough water to make a thick paste
cook 40 sec

sickly sweet, and an oily runny mess that didn't cook. (perhaps too much water or not cooked enough? tasted sickly sweet but oh so good)

my notes were to add a TB of rice flour and swap drinking choc for cocoa.
