Tasty Low Carb & Calorie Soup - allergy friendly

You will need:

Egg roll: (not vegan)
1 TB brown rice flour or almond meal (if paleo)
1 TB water
1 egg
whisk with a fork in an oiled bowl and microwave for 1 minute and 20-30 seconds. (depending on your microwave)

Soup: (vegan)
Saute 4 cloves of garlic in sundried tomato oil, adding 1 TB ground sunflowers/sunflower butter
add a splash (1/2c) of white wine and boil to nothing,
Before it sticks gradually mix in some hot water (to fill half a pot)
Pour in 2 tsp of vegan beef style stock (or chick stock)
Add:
1 TB mixed herbs
1/4 cabbage and 1 TB saurkraut if you have it on hand
1/2 of a chopped small marrow and or 1 zucchini
6 chopped mushrooms
1 chopped carrot
4-5 stalks of celery
2 sundried tomatoes chopped into tiny pieces

Bring to boil then simmer for 30 minutes.


66 calories a serve. Eat as much as you like! Serves 8.


Alternatively you can make this soup:
Spirooli a zucchini and a carrot
Then add water, splash of wine, 1 ts chicken stock, fresh or powdered garlic = 1 clove, and 1 cup mushrooms chopped.
Bring to boil, then simmer until mushrooms are brown and squidgy.
SERVE. So good! And so low in calories!
