Vegan Zucchini Soy alfredo! Gluten free, quick, easy, healthy, dairy free, plant based


It might not look like much, but trust me, it's tasty!

So easy the ingredients and method are written together!
Combine the following in a pan
1 TB corn starch
1 TB Nutritional yeast
1t onion powder
1t Italian herb mix 
2 cups unsweetened soy milk (add 1 TB first to make a smooth paste, then stir in the rest)

Once combined add in the rest of the soy milk and turn the pan on Medium heat.

Add a spiralized zucchini
Stir till thickened
Add 5 quartered vine tomatoes and stir until softened 
Serve it on a bed of lettuce. 
DONE!
