Healthy Carrot Breakfast Muffins
I dunno about you, but I like to start off my day with something that takes zero time to prepare, is really tasty, and healthy! Something not quite sweet either.
Ingredients:
1/2 c canola oil
1 tsp vanilla
1 1/2c grated carrots
1/2 c crushed peanuts
1 1/2 tsp baking powder
1/2 c sugar -----will be seeing if i can cut the sugar out and use a sweet syrup instead)
2 eggs
1/2 cup sultanas
1c gf self raising flour
2 tsp cinnamon (iIlike a LOT of cinnamon, you can add less...)
1/2tsp Xanthan (because on day 3 or so it started to get a bit crumbly)
Method:
*Preheat oven at 160C ( I have a fan forced oven that heats up really well, adjust accordingly!)
1- Add dry ingredients in a bowl, mix well with a whisk.
2- Then make a well in the centre and add liquids and beat with a fork to combine the eggs.
3- Add your fruits, veg and nuts. Stir well.
4- Then pour into greased muffin trays at 160C for about 30-40 mins, until the skewer comes out clean. Let cool and remove from tin, enjoy!
