Pink Fruit Loaf! Gluten dairy friendly!

Oh I'll have to admit, not very fructose friendly aye...fructose doesn't effect me as much as it once did...

Ingredients:

320g laukes easy baker white flour
300mL warm water
2tsp yeast
2TB honey (optional)/ maple syrup
1/2 purple carrot grated
1/2c chopped dated
1/2c sultanas
1/4c chopped dried apricots
1-2tsp cinnamon
1/4c choc sprinkles or choc chips
top with poppy and sesame if you want!

Method:
*preheat oven to 180C

1- Add wet ingredients to your mixer (includes fruit and veg)
2- Add you dry ingredients
3- Mix for 1 minute, scrape sides. Spin another 5 minutes.
4- Let it rise for 30m to an hour
5- Cover with foil and bake at 180C for 30-40 minutes
6- Remove foil and bake a further 10 minutes.

Moist and springy and healthy pink fruit loaf!
